Verdict
Cenizo (Asperrima) is a northern wild agave with its own austere character. Rayo Seco's bottle is a fair introduction, though the cachetón from the same catalog commits harder. Track it next to Derrumbes' northern work. Fair for category mapping, not a flagship buy.
Cenizo is a dusty agave – Rayo Seco lets the dust stay
Tasting notes
Nose: Dry grass, dust, a thin herbal lift
Palate: Dry and northern in character, cenizo runs leaner than Oaxacan agave and at 50.7% the plant's austerity is visible. Rayo Seco's approach is hands-off, appropriately. Not as memorable as the cachetón from the same catalog
Finish: Dry, clean. Medium
The bottom line
Buy it as a regional education. Cachetón is the upgrade
