Verdict
Sacatoro is rarely seen on US shelves and Rayo Seco's 52% bottling is about as committed a single-maguey version as exists. The plant's regional character carries. Track it alongside other Rayo Seco rare-maguey work. A category-expansion bottle for serious collectors.
Sacatoro is the plant most mezcal drinkers haven't met yet
Tasting notes
Nose: Dry hay with a mineral note, faint herb
Palate: Structural, grassy, distinct. Sacatoro (bull-grass) is a rare northern agave, and at 52% Rayo Seco gives the plant full voice. The grass-and-stone signature is specific – drinks like nothing in the Oaxacan catalog
Finish: Herbal, warm. Long
The bottom line
Buy it. Rare northern agave at real proof
