Verdict
Most pechugas are espadín plus a recipe; this is three wild agaves plus a recipe, which sounds like the kind of thing a producer proposes and a production manager talks them out of. Real Minero did it anyway, and at 53% under clay-still the composition doesn't collapse, it stacks. The category's upper bound in glass.
Pechuga at its absolute upper bound
Tasting notes
Nose: Apple, then almond, warm spice, hot clay, faint cured meat
Palate: Layered beyond reasonable ambition at 53% – tobalá floral, largo dry, barril mineral, all framed by the pechuga run
Finish: Endless. Savory, floral, chalky
The bottom line
Defines the upper tier. The category's upper bound
