Verdict
Simeón and Apolonio Ramírez work together on several Rezpiral releases, and this three-agave bottle is the workmanlike version of their collaboration. 50% is honest; all three agaves read; nothing dominates. The bottle doesn't reach the caliber of Berta Vásquez's Rezpiral work, but it's a credible ensamble at a working price. Pick it over most Bozal ensambles.
A brotherly ensamble – more distributed than distinctive
Tasting notes
Nose: Cooked agave, then warm earth, green herb, wet stone
Palate: Balanced, arroqueño providing weight, tobasiche the karwinskii spine, espadín the mid-palate grounding. Simeón and Apolonio Ramírez at San Agustín Amatengo
Finish: Long, mineral, warm
The bottom line
A working Rezpiral – not the one to chase, but the one to drink
