Verdict
Aureliano Hernández stacks two intensifiers here – the capón technique (castrating the quiote pre-harvest) and a second distillation with fruit, and the result is an espadín that reads louder than it should for 46%. Not a reference bottle, but a curiosity with real craft underneath. Pick it if you've worked through Rezpiral's Berta Vásquez and Reyna Sánchez bottles and want something stranger.
Capón plus fruit – two concentration techniques, one bottle
Tasting notes
Nose: Cooked agave – then stewed fruit, warm earth, floral honey
Palate: Round and fruited at 46%, the capón treatment concentrating the base espadín while the fruit distillate adds stone-fruit-orchard layering. 10-12 year espadín is doing the structural work
Finish: Fruity, warm – long
