Verdict
Pechuga de conejo is uncommon, most producers stick with chicken or turkey – and Leonardo Hernández's choice is deliberate. 46% carries the agave and the distillate; the game-note is present without being the headline. Not a benchmark pechuga (Real Minero owns that), but a credible one for drinkers who've done the format and want something less familiar. Rey Campero's codorniz is the other side-bet worth trying.
Rabbit is the pechuga protein you've probably never tried
Tasting notes
Nose: Cooked agave, then warm broth, stewed fruit, a gentle game note
Palate: Round and savory at 46%, the rabbit distillate reading as leaner and slightly more gamey than chicken, the bird choice matters. Leonardo Hernández keeps the base espadín audible
Finish: Long, savory-sweet, warming
The bottom line
A rare pechuga protein, worth the try for the format
