Verdict
Río Seco is not a name most drinkers know, and that's part of why Rezpiral is worth following, the project finds palenques that would otherwise stay local. Alejandrina Aragón Hernández and her partner Nicolás Hernández deliver a cuishe that's more mineral and less rounded than the Valles Centrales versions. Pick it for the terroir shift over any generic cuishe.
