Verdict
Capón-treated espadín is rarer than the standard version because the pre-harvest technique requires patience and sacrifices yield. Aureliano Hernández's version at 46% reads denser than his standard espadín, and the 10-12 year plant age is doing real work. Real Minero's Tobalá Capón is the reference; this is the working-man's capón study. Buy.
Capón is pre-harvest concentration – you can taste the math
Tasting notes
Nose: Cooked agave, then warm honey, green herb, wet stone
Palate: Concentrated at 46%, the capón technique (pre-harvest quiote removal) showing as extra weight and sweetness in the mid-palate. 10-12 year plants were already ready; the capón squeezed more
Finish: Warm, mineral – long
The bottom line
Buy – capón for drinkers who know the standard espadín
