De mojo is a juice-wetting technique during fermentation, and paired with the Río Seco terroir, Alejandrina Aragón Hernández and Nicolás Hernández produce an espadín that reads as concentrated rather than merely high-proof. 56.5% is serious; the mid-palate carries it. Pick it over almost any commercial espadín, this is the agave's argument for being taken seriously.
