Verdict
Jabalí under 50% is usually where bottlers lose the agave; Leonardo Hernández's solo jabalí at 49% just clears the line because his ferment is tight. Not as concentrated as Rezpiral's best wild-agave bottles, and the proof shows as a slight hedge. Rey Campero's Jabalí-Tepextate at 48% works for different reasons (the tepextate lifts). Pick this if you want solo jabalí at a working price.
Jabalí at 49% is a risk – Leonardo Hernández takes it
Tasting notes
Nose: Green pepper with wet stone, wildflower
Palate: Leonardo Hernández's jabalí holding the agave's characteristic wild-foam texture together – 49% is close to the 50% floor jabalí usually demands. The ferment is concentrated enough that it works; structured at 49%
Finish: Herbal, warming
The bottom line
Buy it – jabalí at almost-sufficient proof, done right
