Verdict
Jabalí in an ensamble at 45.1% should fail. Alejandrina Aragón Hernández and Nicolás Hernández's Río Seco method – concentrated cooking, tight fermentation, makes this ensamble read as composed rather than thinned. Mexicano and espadín anchor; cuishe adds karwinskii spine; jabalí threads the texture. One of the Rezpiral bottles that redefines what you thought proof could do.
45.1% with jabalí is risky – the Hernándezes pull it off
Tasting notes
Nose: Green pepper with wet stone, wildflower
Palate: Layered and concentrated, low proof for a four-agave ensamble with jabalí in it, but the Río Seco method produces enough extract that it plays as deliberate. Each agave audible
Finish: Floral, mineral
The bottom line
Buy – 45.1% proof reading like 50% is worth understanding
