San martinero at below 50% is a common disappointment; the agave's vegetal-mineral signature flattens without proof. Simeón and Apolonio Ramírez's Series #7 at 50.2% is exactly where the agave starts to sing. Not quite at Real Minero's San Martinero (54.1%) caliber – but close, and at a smaller price. Buy.
