Verdict

San martinero at below 50% is a common disappointment; the agave's vegetal-mineral signature flattens without proof. Simeón and Apolonio Ramírez's Series #7 at 50.2% is exactly where the agave starts to sing. Not quite at Real Minero's San Martinero (54.1%) caliber – but close, and at a smaller price. Buy.

San martinero needs above 50% to read – the Ramírez brothers deliver

Tasting notes

Nose: Green celery, then wet stone, white pepper, cooked agave

Palate: Lean and electric at 50.2%, san martinero's vegetal spine fully upright. Simeón and Apolonio Ramírez at San Agustín Amatengo, Series #7, full distillation discipline

Finish: Very long, mineral, drying

The bottom line

Buy – karwinskii at the correct proof, in capable hands
