Verdict
Coyote is underloved because most producers hedge the proof; at 49 it finally gets to be itself. Jorge Sánchez treats the agave like a bass singer – the low end and the edge are the point, and he doesn't overdub. Sits credibly alongside 5 Sentidos or Mezcalosfera's coyote lots. Nose: Green pepper. Then citrus peel, wet cedar, a cool mint
Palate: 49.01% shows the coyote's herbal-citrus bite without sanding it; long mid-palate with an unusual savory-salty undertone. Not easy drinking, which is the point
Finish: Cool, green – long
