Sacro Imperio Cenizo
Durango cenizo at 48 – the bottle does its job
Score: 3.5/5 agaves

- Maestro: Manuel Simental
- Region: Nombre de Dios, Durango
- Agave: Cenizo
- ABV: 48%
- Price: $60 ($$)
Verdict
Manuel Simental's cenizo under Sacro Imperio is a credible northern-mezcal pour, the Durango reads cleanly without being overstated. Sits a step behind the Amaras Logia cenizo and in conversation with Derrumbes's Durango releases. Consensus 3.8 rounds down fairly to 3.5. Solid regional bottle.
Cenizo with the Durango accent intact, which is the point
Tasting notes
Nose: Piney menthol, dry hay, dark honey, cracked pepper
Palate: 48% is a reasonable proof for cenizo; the agave's Durango character, sharper herb, less sweetness than Oaxaca bottles, comes through clean
Finish: Warming, piney – long
The bottom line
Buy for anyone learning cenizo
