Verdict
Apolonio Ramírez is a top-tier mezcalero – his work under Rezpiral is evidence. This Sacrvm bottle at 40% reads as a commercial proof decision that undersells the mezcalero. No consensus yet; our read is 3.0. Pass if the 48% version is anywhere near it.
Madrecuishe below 48 is madrecuishe held back
Tasting notes
Nose: Soft smoke with faint saline, mineral undercurrent
Palate: 40% is too low for a madrecuishe blend; the karwinskii's structural edge gets sanded into the espadín sweetness. Clean but underpowered
Finish: Short-medium, clean, soft
The bottom line
A pass; buy the 48% Sacrvm madrecuishe instead
