Flavio Pérez Méndez's tobalá is a clean, textbook reading of the agave, no showoff moves, just proof honored and agave respected. Sits squarely in the middle of the tobalá tier, a half-step behind the Rezpiral or Real Minero versions at comparable money. Consensus 3.8 is fair; we score it 3.5.
