Verdict

Flavio Pérez Méndez's tobalá is a clean, textbook reading of the agave, no showoff moves, just proof honored and agave respected. Sits squarely in the middle of the tobalá tier, a half-step behind the Rezpiral or Real Minero versions at comparable money. Consensus 3.8 is fair; we score it 3.5.

A tobalá done by-the-book, which is a compliment when the book is right

Tasting notes

Nose: Honeysuckle with green melon, faint floral

Palate: 48% is the textbook proof for tobalá; the sweetness registers with mineral ballast underneath, the mid-palate has real body

Finish: Cool, floral-slate-tinged

The bottom line

Reliable tobalá when the flagship bottles are out of reach
