Pechuga de mole is an obvious-sounding idea that rarely works – the mole usually bullies the mezcal. Jessica Hernández calibrates the charge so the mexicano and tobaziche survive the treatment. Sits near Real Minero's more experimental pechugas. Consensus 3.5 stands.

Nose: Cooked agave, dried chile, cocoa, a faint cinnamon, warm earth

Palate: 47% gives the mole charge room to layer; mexicano and tobaziche base reads clearly under the spice wash. Warm and dense without being sweet

Finish: Warming, lightly bitter
