Verdict

Jorge Pérez's Alto is the bottle you hand someone who thinks mezcal means Oaxaca. Rio de Parras soil, Filipino-style distillation tradition, a maestro who has been working the same ground his whole life – every flavor has a reason to be there. This is the Real Minero of Michoacán, and the comparison is earned, not flattering.

The bottle that ends the argument about whether Michoacán competes with Oaxaca

Tasting notes

Nose: Lemongrass, cracked pepper, wet slate, a thread of chocolate

Palate: 46% feels like more – the mid-palate is loaded with citrus oil and herb, a metallic minerality you only get from the Rio de Parras bedrock, a dark-chocolate depth under the brightness

Finish: Warming, mineral with a chocolate edge

The bottom line

Hunt this before the price catches up to the liquid
