Jorge Pérez's Alto is the bottle you hand someone who thinks mezcal means Oaxaca. Rio de Parras soil, Filipino-style distillation tradition, a maestro who has been working the same ground his whole life – every flavor has a reason to be there. This is the Real Minero of Michoacán, and the comparison is earned, not flattering.
