Verdict
Cirial lives in tobalá's shadow and madrecuishe's margin, which is where the good bottles hide. Siempre Oaxaca's cooperative version delivers the agave honestly, vegetal, stony, a little weird in the way cirial should be. The cooperative model caps the ceiling, but the floor is solid enough to recommend.
Cirial is the karwinskii people forget. This one makes the case
Tasting notes
Nose: Wet celery, green stone, a trace of anise, light smoke
Palate: Refrescador distillation keeps the cirial's herbal strangeness legible, celery and stone, a faint anise top, mineral through-line without the copper softening
Finish: Medium, dry, vegetal
