Siempre Oaxaca Pechuga
A pechuga that never transforms the base
Score: 2.0/5 agaves
- Producer: Siempre Oaxaca Mezcal
- Region: Ejutla, Oaxaca
- Agave: Espadin
- Price: $65 ($)
Verdict
The best pechugas taste like the kitchen that made them, spiced fruit, turkey, a month of patience visible in every sip. This bottle tastes like espadín with an asterisk. For what pechuga can be, pour Real Minero or Siete Misterios. For what pechuga shouldn't be, this is the reference.
Pechuga as a label, not a technique
Tasting notes
Nose: Light smoke up front. Faint poultry note, cooked agave, generic sweetness underneath
Palate: The format promises revelation and this delivers decoration, a sweet, thin espadín with a suggestion of savory, nothing structural enough to justify the category
Finish: Sweet, gone, short
The bottom line
Skip. The category deserves better advocates than this
