Verdict
Camilo García Gutiérrez's jabalí at 51.4% is what the agave was asking for all along. The agave's difficult-to-distill reputation means most commercial bottles land under-proofed and under-expressive; this one commits. It's the reference-grade jabalí at its price, and the consensus 4.8 is earned. Scale back half a point only because Lalocura's jabalí still sits a rung higher.
Jabalí under 50% is jabalí underselling itself. This doesn't
Tasting notes
Nose: Wild herbs with a savory funk, mineral depth
Palate: 51.4% is where jabalí finally speaks, the agave's notorious foam-trouble distillation rewards high proof with concentrated pepper, a wild-herb backbone, and a brothy savor most bottles dilute out
Finish: Peppery, warming – very long
The bottom line
The jabalí to drink if you want to know the agave
