Verdict

Gilberto Vásquez distills mexicano through a copper refrescador in a region where clay pots are orthodoxy, and the result is exactly the textural surprise you'd hope for – same agave, different machine, different answer. This belongs on the shelf next to a Real Minero mexicano for a comparison that will reshape what you think the agave sounds like.

The still choice is the story. The liquid agrees with it

Tasting notes

Nose: Cooked pear, white pepper, wet stone, a trace of clove

Palate: 48% and the refrescador still – rare in Sola de Vega – give this an oilier texture than clay-pot versions, with the mexicano's pepper and pear sweetness layered through

Finish: Peppery, mineral – long

The bottom line

Buy it for the still alone. Keep it for the mexicano
