Verdict
Manuel Méndez's tepextate is what a quarter-century of agave maturity sounds like when a producer doesn't rush the distillation. At 45.9% it sits at the agave's proof floor but the aromatics do the work the alcohol doesn't need to. This is the tepextate Mal Bien and Real Minero would be happy to pour next to theirs. Buy it without reading the price.

Nose: Green bell pepper, wet stone, crushed sage, a mineral smoke
Palate: 45.9% carries the tepextate's characteristic pepper-and-herb architecture with the Ocotepec river rock depth underneath, not flashy, not restrained, just fully expressed
Finish: Peppery, cooling. Very long
