Verdict

Nicolás García Gutiérrez puts two of the category's most demanding wild agaves in one still and refuses to compromise either. Tobalá's aromatic lift and tepextate's peppery spine share the glass without arguing. This is what the ensamble format is supposed to do when a maestro commits, and this one does.

A wild-agave ensamble where neither agave loses itself

Tasting notes

Nose: Green bell pepper with wet stone, white flowers

Palate: 48.2% threads tepextate's pepper over tobalá's floral sweetness, the refrescador's texture keeps the mid-palate oilier than a copper blend would, without dulling either agave's signature

Finish: Floral-peppery, mineral. Stays very long
