Verdict
Sergio Juárez Patricio distills tobaziche in a refrescador that's uncommon outside his town, and pushes it to 57% where most bottles would back off. The result is a karwinskii that argues, mineral, herbal, licorice-dark, against the idea that wild agave bottles need to be restrained. Pour it in small amounts and let it work.
Tobaziche at 57% is the agave turned up past polite
Tasting notes
Nose: Wet stone – then green herb, a concentrated mineral top, licorice
Palate: 57% makes this serious, the tobaziche's karwinskii signature, stone, herb, oil, at a concentration most bottles can't reach, with a licorice-root depth from Amatengo's specific terroir
Finish: Limestone, warming
The bottom line
A tobaziche with conviction. Reach for it for the proof alone
