Verdict
Tobalá capón, harvest delayed past the usual point to let the plant concentrate sugars further, should sit above standard tobalá in body and complexity. Victor Ramos's ImpEx version has the aromatic lift but the 48.3% proof keeps the mid-palate from reaching the weight the technique justifies. Climb to Sin Gusano or Real Minero tobalá bottles for the ceiling; this one is competent.
Capón tobalá at 48% – the technique half-delivered
Tasting notes
Nose: Honey, wet stone, green melon, white flowers
Palate: 48.3% carries the tobalá capón's concentrated-sugar signature, floral lift, honey depth, but the proof is on the lower end of what the capón technique asks for, and the mid-palate weight doesn't quite match the aromatics
Finish: Floral, mineral. Stays long
The bottom line
A competent capón. Climb higher for the technique's full payoff
