Verdict

Jabalí's foam-prone distillation means producers have to work harder to reach proof, and most commercial versions compromise in the direction of the price point. The Lost Explorer's 45% jabalí is the textbook example, pleasant aromatics, insufficient structure. For jabalí rendered at the proof the agave demands, reach for Sin Gusano's 51.4% version. Skip this one.

Nose: Wild herb walks in first. Then white pepper, cooked agave

Palate: 45% is below the jabalí floor, and the bottle feels it, the agave's characteristic pepper-and-herb concentration sits just out of reach, the mid-palate weight dulled

Finish: Herbal, warming – medium

Pass. Sin Gusano Jabalí at 51.4% is the reference
