Verdict

Israel Pérez Santiago's capón harvest – quiote cut, plant left to concentrate sugars, is a technique Matatlán producers rarely commit to with espadín because it costs time. The Moon Shift's does, and the mid-palate shows it. Not a reference wild-agave bottle, but at its tier a more considered Matatlán espadín than most. Worth tasting.

A Matatlán espadín that takes the capón harvest seriously

Tasting notes

Nose: Green apple with a trace of chocolate, mineral smoke

Palate: 46% and the capón harvest technique give this more weight than the usual Matatlán joven – concentrated agave sweetness, stone depth, glass aging adding integration

Finish: Mineral, clean – long

The bottom line

A considered Matatlán espadín. Buy for the technique
