Israel Pérez Santiago's capón harvest – quiote cut, plant left to concentrate sugars, is a technique Matatlán producers rarely commit to with espadín because it costs time. The Moon Shift's does, and the mid-palate shows it. Not a reference wild-agave bottle, but at its tier a more considered Matatlán espadín than most. Worth tasting.
