Verdict
Elias Jose Angeles Ojeda's tobalá is consistent with the house style, restrained, clean, Tilcajete-specific, which works better with espadín than with wild tobalá. At 45% the agave gets enough room to breathe, but the house's quiet touch files down some of the floral lift the agave would otherwise push harder. A credible bottle that doesn't quite reach the tier ceiling. Our read: 3.5.
Tobalá done quietly – the house signature, at the agave's cost
Tasting notes
Nose: Honey, green melon, wet stone, a floral top
Palate: 45% carries a lighter-bodied tobalá profile, the floral and honey notes come through, the mineral mid-palate is present but restrained, the house style visible
Finish: Medium-long, floral, limestone
The bottom line
Competent. Banhez or Sin Gusano tobalás reach further
