Verdict
Espadilla is the agave most producers treat as a cousin to espadín and leave at that. Gonzalez treats it like its own plant, and the proof – nearly 50% – gives the angustifolia the room it needs to say something distinct. This is a bottle you can serve next to Tosba's espadín and the difference will be obvious in the glass, which is the point of keeping them separate.

Nose: Green apple skin, then cooked agave, wet stone, wildflower
Palate: Bright and aromatic at 49.21%, with the espadilla carrying an unexpectedly creamy mid-palate and the Sierra Norte minerality giving it spine
Finish: Clean, faintly floral. Long
