Verdict
Pechugas live or die on whether the protein lands as decoration or as actual distillation work. Gonzalez gets it right, the chicken hits as a savory shadow rather than a cooked-bird flavor, and the espadín's sweetness carries the extra weight. Priced below the reference pechugas (Real Minero, Vago Emigdio), and it earns the shelf.
