Verdict
Warash shows up on so few labels that most drinkers have never met it. Gonzalez's expression is the rare 'rare-agave' bottle where you can tell the producer actually cares about the plant and isn't just using it as packaging. At 50.65% the structure is serious. If you're cataloguing Oaxacan wild agaves, this is a genuine data point.
Every Tosba bottle earns its place in the line. Even the oddball
Tasting notes
Nose: Warm bread, wildflower, green olive, stone
Palate: Structured and herbal at 50.65%, with the warash, a Sierra Norte rarity, drinking like something between cenizo and karwinskii in character: lean, mineral, a touch savory
Finish: Mineral, faintly salty
The bottom line
Worth tracking. Rare-agave work done with the house standard
