Single-maestro lines force a level of accountability brand-driven mezcals can sidestep, and Diego Lucas Garcia is the reason Tr3s Tiempos deserves the shelf space. The bicuishe sits right where the agave is most itself – herbal, mineral, austere – and the 49% proof lets it stay there. Between this and the Tr3s Tiempos tepextate, the San Luis Amatlán bench is quietly matching anything in Miahuatlán.

Nose: Wet rope, green pepper, cooked agave, distant smoke

Palate: Lean, mineral, bone-dry at 49%, with the karwinskii structure all in the foreground – the sort of bicuishe that makes the difference between the karwinskii family obvious in a side-by-side
