Verdict
Cucharilla is a difficult plant to make legible – it lacks the sweetness of tobalá and the density of arroqueño, so there's nowhere for a careless producer to hide. Diego Lucas Garcia's version is disciplined without being dull, the bottle that makes the case for the agave rather than dressing it up. Track it alongside the Tr3s Tiempos bicuishe.
Cucharilla is agave at its most austere. Don't expect sweetness
Tasting notes
Nose: Green hay, then wildflower, limestone, a dried-herb undertone
Palate: Bright and dry at 49.5%, with cucharilla's characteristic grassy-mineral lift intact and Diego Lucas Garcia's hand keeping the back palate clean
Finish: Long, drying, chalky
The bottom line
A working cucharilla from a maestro worth following
