Verdict

Cucharilla is a difficult plant to make legible – it lacks the sweetness of tobalá and the density of arroqueño, so there's nowhere for a careless producer to hide. Diego Lucas Garcia's version is disciplined without being dull, the bottle that makes the case for the agave rather than dressing it up. Track it alongside the Tr3s Tiempos bicuishe.
