Verdict
Jabalí is the agave that most punishes under-proofing – below 50% the plant just can't carry its own weight, and the glass fills with floral vapor that goes nowhere. Diego Lucas Garcia hits 49.5% and builds the structure to support it. This is jabalí at reference, a bottle that makes Wahaka's 47% expression feel undercooked. Don't pass on this.
