Verdict
Tres Santos's tobalá drinks the way the rest of the house does, modestly, honestly, at a proof that lets the plant whisper rather than speak. At 45% it's not going to argue with Vago's Emigdio tobalá, but it's also not pretending to; for the price tier and the category, this is a fair entry, and Martinez Jerónimo's fingerprints are consistent across the range.
A tobalá that keeps its promises, if not its ambitions
Tasting notes
Nose: Honey with wildflower, stone
Palate: Clean and mineral at 45%, with tobalá's expected sweetness present but not quite the concentration you get from the higher-proof references
Finish: Dry, slate-tinged – medium-long
The bottom line
A working tobalá for someone not ready to step up to the references
