Verdict

Jabalí is the agave that exposes new producers and embarrasses sloppy ones; the Hijos de Aquilino clearing this bar on a jabalí-espadín ensamble at 50.2% says more about the palenque's future than any Vago marketing could. The father's discipline, the father's stubbornness with difficult agaves, the son's hand. Exactly as coherent as it should be.

The Hijos de Aquilino line is how Vago earns its future

Tasting notes

Nose: Hot stone, green pepper, cooked agave, herbal density

Palate: Complex and disciplined. At 50.2%, the jabalí's difficulty managed, the espadín framing

Finish: Drying, warm. Very long
