Verdict
Mateo and Temo Garcia's pechuga hits as a legitimate continuation of Aquilino's work rather than a pale copy, the Candelaria Yegole fingerprint is present, the proof at 51.3% is honest, and the savory layering is in the right place. A touch less integrated than Jarquín's Miahuatlán pechuga but priced accordingly. We come in at 3.5.
