Verdict

Mateo and Temo Garcia's pechuga hits as a legitimate continuation of Aquilino's work rather than a pale copy, the Candelaria Yegole fingerprint is present, the proof at 51.3% is honest, and the savory layering is in the right place. A touch less integrated than Jarquín's Miahuatlán pechuga but priced accordingly. We come in at 3.5.

The Hijos bench is still writing its own ceiling

Tasting notes

Nose: Cooked agave, savory fruit, toasted nut, a faint gamey undertone

Palate: Warm and integrated at 51.3%, with the family style recognizable but the hand still developing next to their father's reference pechugas

Finish: Warming, faintly meaty. Long

The bottom line

Track it. Succession pechuga from a bench worth following
