Verdict

Emigdio Jarquín's tepextate does what the plant's long growth demands, proof to carry, structure to develop, a maestro's restraint to keep the florals from going shrill. Not the most dramatic tepextate in the category (Tr3s Tiempos at 49% is that) but a dependable reference at its price and bench.

Tepextate at 50% is tepextate with its full vocabulary

Tasting notes

Nose: Wet basil, then white pepper, wildflower, stone

Palate: Floral and mineral at 50%, with the tepextate's slow-plant weight intact and the Miahuatlán limestone signature running under it

Finish: Very long, cooling, peppery

The bottom line

Track it. Miahuatlán tepextate at proof that holds
