Verdict
Macario Partida has been one of the most quietly important maestros in the Zapotitlán de Vadillo bench, and his cimarrón at capón harvest and 49% proof is the bottle that makes Jalisco legible outside of raicilla. Between this and the Partida ixtero amarillo bottlings, the maestro's range is the argument for the Vecindad line.
Jalisco cimarrón at 49% capón is the state arguing back
Tasting notes
Nose: Wildflower up front. Cooked agave, wet stone, a dry-herb undertone underneath
Palate: Dense and aromatic at 49%, with the capón harvest adding structural weight and the cimarrón's wild character carrying the aromatic top
Finish: Cooling, mineral
The bottom line
Track it. Capón cimarrón from a Jalisco reference
