Verdict
Macario Partida's two-agave capón ensamble is the Vecindad bottle that argues hardest for the Zapotitlán bench – 51% proof, two wild agaves, both bottled as capón. The two don't fight each other; Partida lets each one lead in its turn. Between this and his straight cimarrón, the maestro's range is legible.
Two wild agaves, one maestro, no compromise
Tasting notes
Nose: Wildflower walks in first. Then cooked agave, warm stone, a tropical lift
Palate: Dense and structured, with ixtero amarillo providing the aromatic top and azul telcruz anchoring the mid-palate
Finish: Cooling, mineral – very long
The bottom line
Track it. A Jalisco capón ensamble with genuine structure
