Verdict
Manuel Salcedo's alto raicilla from Mascota is a useful counterpoint to the Joya Cabo Corrientes bottling – different altitude, different vegetation, different fingerprint. At 50% the plant gets room, and the mountain terroir reads clean and mineral. We come in at 3.5. Between this and the Salcedo lechuguilla, the Mascota bench is the case for highland Jalisco.
Highland raicilla is a different category from coastal raicilla
Tasting notes
Nose: Green herbs walks in first. Then tropical fruit, wet stone, a floral lift
Palate: Aromatic and structured at 50%, with the alto agave (a highland Jalisco variety) reading as a cleaner, more mineral raicilla than coastal expressions
Finish: Cooling, limestone – very long
