Verdict

Wahaka's Botaniko is a pechuga-format expression that uses herbs rather than a protein, and the result lands as more commercial than traditional – an espadín distillate with infused aromatics rather than a composed pechuga. At 45% it's proofed reasonably, but the botanical premise lands closer to a flavored spirit than a mezcal statement. Pass for Tosba's chicken pechuga.

Botanical pechuga is pechuga reaching for a gin drinker

Tasting notes

Nose: Green herbs, then cooked agave, a perfumed top note, faint smoke

Palate: Mid-weight at 45%, with the botanical infusion reading as a fragrance rather than a fully integrated pechuga run

Finish: Medium, herbal, clean

The bottom line

Competent botanical pechuga. Pechuga purists will pour something else
