Verdict
Pechuga at its best is distillation as seasoning – the protein and agave integrate at the still. Wahaka's Guajolote con Fruta version pulls in too many directions: turkey, fruit, espadín, and the result is a bottle that lands as three ideas refusing to join. Skip for Banhez's simpler pechuga de pavo, or better, Tosba's borrego version.
Pechuga isn't a fruit salad. This bottle forgets that
Tasting notes
Nose: Cooked fruit with cooked agave, a perfumed sweetness
Palate: With the fruit dominating the turkey distillate and neither integrating with the espadín base; sweet and disjointed at 46%
Finish: Sweet, off-balance – short
The bottom line
Skip. A pechuga pulled apart by its own ingredients
