Verdict
Jabalí is the agave that most punishes under-proofing; at 47% Wahaka's bottle gets most of the floral-tropical profile but loses the structural weight the plant delivers at reference. Tr3s Tiempos at 49.5% shows what the plant actually does at proof. Alberto Morales Mendez is present in the cut, but the bottling is held back by a cautious ABV. Pass for the Tr3s Tiempos version.

Tasting notes
Nose: Wildflower, then tropical fruit, a perfumed top, faint smoke
Palate: Aromatic but thin at 47%, with the jabalí's characteristic floral lift legible but the back palate disappearing before the structure arrives
Finish: Floral, short for the agave. Medium
