Xicaru Pechuga Mole

Pechuga-mole on a Xicaru base – ambitious but the base limits the ceiling

Verdict

Pechuga is a format that fails quietly when the base can't talk back, and that's the failure here: the mole does all the work and the mezcal is a delivery mechanism. 5 Sentidos' Pechuga de Mole Poblano is the same idea with a base that holds up its end. This one mostly argues for drinking that one.

Mole pechuga deserves a better base

Tasting notes

Nose: Dried chile, chocolate, cinnamon, faint smoke

Palate: The mole profile comes through clearly at 46% – the ingredients do heavy lifting the Xicaru espadín couldn't alone

Finish: Medium-long, warm, spice-forward

The bottom line

5 Sentidos' Pechuga de Mole Poblano is the same idea done correctly
