Yuku Savi's Oaxaca-Puebla border palenque, run by Félix Macedas, is building a catalog that will be cited a decade from now. The candelillo at 49% is the clearest statement of their thesis – wild agave, high proof, no compromises, deep place. Take it. Real Minero and Lalocura drinkers will recognize what's happening here.

Tasting notes
Nose: Cooked agave over wet limestone, wildflowers, green pepper, a thread of smoke that never shouts
Palate: Deep and mineral, candelillo's rare wild-karwinskii character showing up with authority – salt, herb, cold stone, a long structural middle. Concentrated, not aggressive
Finish: Stone, drying
