Verdict
Jabalí is an agave that asks a producer to prove themselves – it's finicky to ferment, scarce to distill, and unforgiving of shortcuts. Félix Macedas's cachetón variant at 49% meets the demand and then keeps going. This drinks in the same conversation as Real Minero's jabalí work. Take it; this is not a bottle that comes around twice.

Nose: Green apple, wet fern, peppery wild herbs, cold stone, a bright floral top
Palate: Intense and lifted. At 49%, the jabalí's notorious difficulty (foamy ferments, low yields, an unruly palate) showing up as concentrated, not chaotic. Tight mineral structure, long herbal middle
