Verdict
Jabalí is the agave that most demands high proof, and 45% is the floor – Yuu Baal sits right on it. The character is recognizable but attenuated; the mineral-floral tension jabalí should deliver comes through slightly muted. Consensus 3.9 feels kind. For the same money, Yuku Savi's jabalí-cachetón at 49% is a different tier of conversation.
Jabalí at 45% is a bottle half-committed to itself
Tasting notes
Nose: Green pepper, cold stone, wildflower
Palate: Lean and herbal. At 45%, jabalí's difficult personality emerging in pieces – mineral edge, vegetal middle, a quiet floral note. Softer than the agave wants
Finish: Dry, faintly bitter
The bottom line
A gentler jabalí than the agave deserves
