Verdict
Salmiana is agave that was never going to fit a Oaxaca-trained palate, and that's the point. Derrumbes' SLP is the clearest expression of the state's agronomy on the US market. It will polarize a tasting room and earn at least one convert.

Nose: Fresh asparagus walks in first. Then salt, white pepper
Palate: Vegetal in a way Oaxacan mezcal almost never is – this is what salmiana does that angustifolia cannot
Finish: Saline, herbal, strange in a good way – long
